RICE SALAD 
2 c. cooked rice
6 radishes, chopped
2 med. tomatoes, chopped
1 c. chopped cucumber
1/2 c. chopped green pepper
1/2 c. chopped celery
2 green onions, chopped
1/2 red onion, chopped
2 tsp. parsley flakes
1/2 c. low calorie dressing
4 tbsp. vinegar

Mix and refrigerate 24 hours. 1 1/2 bread, 2 fat, 2 vegetable, 4 servings.
