SCALLOPED POTATOES 
6 med. potatoes, sliced thin
1/2 c. onion, chopped
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter
2 1/2 c. milk
1 c. cheese, shredded (Swiss or Gruyere)
1 c. Cheddar cheese, grated
1 onion, thinly sliced

Make a sauce; melt butter. Stir in flour to make a paste. Slowly add milk, stirring constantly. Add salt and pepper. Stir until mix thickens. Add cheese and onions to mix.

Layer in 10 c - 2.5 l casserole: sauce, potatoes, thinly sliced onions (if you really like onions), sprinkle with grated Cheddar sauce, potatoes, onions, Cheddar, sauce. Top with cheese, cover and bake at 350 degrees for 1 hour, then uncovered for 1/2 hour.
