SHRIMP BOAT 
1 (10 oz.) pkg. frozen green peas
1 (8 1/2 oz.) can whole new potatoes, drain & chop
1 (4 1/2 oz.) can tiny deveined shrimp, rinse & drain
1 med. stalk celery, chopped
3 sweet pickles, thinly sliced
1/2 c. shredded cheddar cheese
1/2 c. mayonnaise, lite
2 tsp. lemon juice
3/4 tsp. seasoned salt
3 lg. green peppers, cut lengthwise in half
Lettuce leaves

Rinse frozen peas under running water to separate. Toss all ingredients above with peas. Scoop seed and membranes from pepper halves and place halves on a plate with lettuce leaves. Fill peppers with shrimp mixture.
