VEGETABLE & HAM DELIGHT 
3 c. potatoes, chunks
2 c. carrots, sliced
3 c. ham, cubed

Cook vegetables and ham separately until tender; drain. Put all together in large casserole; set aside. Meanwhile, melt 1/2 cup butter in a 10-inch skillet. Stir in 3/4 cup flour and 8 cups milk; stir, clumps will dissolve. Add 1 pound cut-up Velveeta cheese. After cheese melts, pour over hot vegetables and ham.
