SCALLOPED TOMATOES 
6 med. sized tomatoes
4 strips bacon
2 hard boiled eggs, sliced thin
2 c. cracker crumbs
1/2 c. hot water
Bacon drippings
Salt & pepper
1/2 c. grated cheese

Fry bacon crisp, saving drippings for seasoning. Peel and slice tomatoes. In a 1 quart casserole, place a layer of tomatoes, part of crumbled bacon and sliced egg. Add salt and pepper, then a layer of crushed crackers. Repeat layers ending with tomatoes. Add some bacon drippings to hot water and pour over tomatoes. Top with cheese, bake at 325 degrees for 30 minutes. Serves 6.
