PINEAPPLE-LIME VELVET 
1 pkg. lime flavored gelatin
1 c. boiling water
3 oz. pkg. cream cheese
2/3 c. crushed pineapple with its own juice
1/2 c. finely cut celery
1/2 c. heavy whipping cream, whipped
Maraschino cherries

Add gelatin to water and stir until dissolved. Add cheese and beat with a rotary beater until cheese is well blended. Chill until slightly congealed, then add pineapple and celery. Fold in whipped cream lightly until well distributed.

Turn into 3-4 cup mold that has been rinsed with cold water. Chill until firm. Unmold. Serve on watercress and garnish with cherries. Serve 6 to 8.
