MUSHROOM BRAISED CHICKEN 
1 frying chicken, cut in pieces
1/2 lb. fresh mushrooms
2 cloves garlic, minced
3 tbsp. vegetable oil
2 tbsp. lemon juice (or more)
2 tbsp. soy sauce (or more)
1 tsp. salt

Brown chicken and garlic lightly in oil. Add sliced mushrooms. Cover and cook 5 minutes. Add lemon juice. Cook until almost absorbed; add soy sauce and salt. Add chopped green onions and parsley. Cover and cook gently until chicken is tender (about 20 or 30 minutes).
