ZUCCHINI FRITTATA 
2 (6-8 inch) zucchini, sliced thin
1 med. onion, sliced thin
1 sm. garlic clove
3 tbsp. butter
8 eggs
8 tbsp. Romano cheese
3/4 tsp. salt
1/4 tsp. pepper

Melt butter over medium heat in 10 inch skillet. Add onion and garlic and sauteed onion. Add zucchini; saute 1 minute. Cover skillet; reduce heat to medium and cook 4 minutes until tender. Remove cover and saute 1 more minute until excess moisture evaporates.

Preheat broiler. Combine eggs, 6 tablespoons of cheese, salt and pepper; beat with whisk until blended. Pour over vegetables. Let cook 4-5 minutes on medium heat until egg at outer edge of pan cooks.

When underside is golden brow and top is somewhat liquid, turn off heat. Sprinkle with remaining 2 tablespoons cheese. Slide skillet under broiler for 2 minutes until top is cooked and golden brown. Cut in wedges and serve.
