HOT POTATO SALAD 
6 med. potatoes
3 eggs, hard cooked
3 strips side bacon
1 tbsp. chopped onion
1 1/2 tbsp. chopped celery
1/2 c. mayonnaise
Salt & pepper to taste
Sprig of parsley

Cook potatoes, peel and cube (do not over cook). Dice 2 of the hard cooked eggs. Chop side bacon and fry. Add chopped onion and celery; cook until limp. Combine potatoes, eggs, mayonnaise, salt and pepper with onion and celery. Heat through, stirring constantly. Remove from heat. Decorate with remaining egg and sprig of parsley. Serve hot.
