SOLE AMANDINE 
2 lb. fillet of sole or flounder
1/4 c. all-purpose flour
1 tbsp. paprika
1 1/2 tsp. salt
2 tbsp. oil
1/4 c. (1/2 stick) butter
2 tbsp. lemon juice
1/4 tsp. hot sauce
1/2 c. toasted almonds, slivered
chopped parsley

Preheat broiler. Rinse fish and pat dry with a paper towel. Mix flour, paprika and salt. Coat all surfaces of fish with mixture. Grease a shallow baking pan and arrange fish close together. Brush with oil and broil 2 or 3 inches from broiler for 5 to 8 minutes.

Meanwhile, melt butter, add lemon juice and hot sauce. Transfer fish to a warm platter and pour butter mixture over. Sprinkle with slivered almonds and chopped parsley. Serve immediately.
