SAUTEED SALMON PATTIES 
1 sm. zucchini
1 sm. carrot
1 (15 oz.) can salmon, drained & flaked
1 1/2 c. soft bread crumbs, white or whole wheat
1 tsp. grated onion
1/4 tsp. salt
1/8 tsp. pepper
1 egg (or equiv. egg sub.)
2 tbsp. salad oil
Serve with:
3 tbsp. mayonnaise
3/4 tsp. prepared mustard

Finely shred zucchini and carrot. In medium bowl mix zucchini, carrot and next 6 ingredients; shape into patties and saute in hot oil about 8-10 minutes until browned on both sides. Stir together mayonnaise and mustard; serve with salmon patties. Good and easy. Garnish with cucumber slices and lemon wedges.
