B.B.Q. CHICKEN | |
MARINATING SAUCE: 2 cloves garlic, crushed 3 tbsp. Worcestershire sauce 2/3 c. lemon juice 1/2 c. olive or corn oil 1/2 c. bacon fat Chopped parsley, fresh, 1 tbsp. or dried, 1 tsp. 1 tsp. oregano Mix all ingredients well in a blender if possible. Have chicken cut into serving pieces. Marinate in sauce for 2 to 3 hours. When broiling keep brushing with remainder of sauce. Keep turning the chicken until it is well browned on all sides. Remove to a roasting pan. Baste with beer and allow to steam on a low heat, covered for about 15 to 25 minutes. NOTE: This is a Grampa and Uncle Willy specialty. They used a whisk made out of long sprigs of parsley tied together to baste the chicken with the sauce. |
