CHICKEN AND RICE 
2 boneless chicken breasts, cut in bite size pieces
1 can cream of mushroom soup, undiluted
1/4 c. butter
4 tbsp. chopped onion
2 cloves garlic, chopped
1 c. cubed Cheddar cheese
1 c. sliced fresh mushrooms
Steamed or boiled rice

Melt butter in electric fry pan. Saute garlic and onion, remove from pan. Saute chicken. Add soup, garlic, onion and cheese. Simmer 15 minutes. Add mushrooms and simmer 5 minutes. Serve over rice.
