EGGPLANT 
Eggplant
Cr acker crumbs
2-3 eggs, beaten well
Spaghetti sauce
1 - 1 1/2 c. shredded cheese (Monterey Jack, Muenster, Provolone - your choice)

Peel and slice eggplant. Dip in egg, then in cracker crumbs. Fry in butter until light brown. Spread a little sauce in baking dish, layer the eggplant, cheese and sauce. Bake at 350 degrees for 30 minutes, or until fork tender.
