COUNTRY BEAN SOUP 
16 oz. mixed beans
2 qts. water
2 tsp. salt
Pepper to taste
16 oz. ham, cut in chunks or 1 lb. ground turkey
1 lb. onion
1 lg. (28 oz.) can chopped tomatoes
1 tsp. chili powder or 1 tsp. parsley
1 clove garlic, minced
Juice of 1 fresh lemon (optional)

Rinse beans well. Place in large kettle. Cover with water, soak overnight. Drain and place back in large kettle. Cover with 2 quarts water. Add salt to taste. Add ham or turkey. Simmer for 2 1/2 to 3 hours partially covered, stirring occasionally. Add onion, tomatoes, chili powder or parsley, garlic and lemon juice. Season to taste. Cook 30 minutes longer. Serves 8-10.
