TURKEY OR CHICKEN CREOLE 
2 c. diced onion
2 c. diced celery
2 c. chopped green pepper
5 cloves garlic
1 1/4 c. diced ham
4 tbsp. olive oil
4 lbs. canned tomatoes, crushed
10 oz. tomato sauce
1 c. water
2 bay leaves
1/2 tsp. thyme
1/2 tsp. basil
4 tbsp. chopped parsley
Pinch of sugar
Salt and pepper to taste
2 tbsp. cornstarch
5 c. cooked chicken or turkey meat

Saute onions, green pepper, celery, ham and garlic in olive oil. Add crushed tomatoes, tomato sauce, water and all other ingredients except cornstarch and chicken. Simmer about 1 hour.

Thicken with cornstarch diluted in a little water. Add chicken to sauce about 20 minutes before serving. Heat through. Remove bay leaves and garlic before serving, if desired. Serve over rice.
