SHRIMP OR CHICKEN CREOLE 
4 tbsp. flour
5 tbsp. shortening
1 lg. onion, chopped
6-8 green onions, chopped
1 sm. clove garlic, chopped
1/2 c. celery, chopped
1/4 c. bell pepper, chopped
1 (8 oz.) can tomato sauce
1 can water
Salt, red & black pepper
1 tsp. hot sauce (Tabasco)
3/4 lb. shrimp or chicken

Add flour to shortening in preheated deep skillet. Cook on medium heat. Heat until rich dark brown, stirring constantly to prevent scorching. (Pre-cook chicken.) Add remaining ingredients (except shrimp or chicken). Season to taste. Simmer for 30 minutes. Cover, bringing to boiling point and then add shrimp or chicken. Cook for 15 to 20 minutes more. Serve over rice.
