OLD FASHIONED CHEESECAKE 
FILLING:

2 lbs. creamed cottage cheese
1 1/3 c. sugar
6 eggs, beaten
1 1/2 c. evaporated milk
2 tbsp. flour
Juice of 1 lemon
1/2 tsp. lemon rind
1/2 tsp. vanilla

GRAHAM CRACKER CRUST:

2 packets graham crackers
1/2 c. melted butter
1/3 c. sugar
1/4 tsp. cinnamon, optional

Crush crackers till fine. Add sugar, butter. Mix well. Press into 9 x 13 inch pan or 9 inch springform pan. Beat eggs until lemony. Add sugar gradually. Beat well; add flour, lemon juice and rind. Put cottage cheese through a ricer or sieve. Add to egg mixture. Slowly add evaporated milk. Blend well. Pour into prepared crust. Bake at 325 degrees for 55 minutes. Turn off heat. Open oven door and let stand in oven 1 hour until set.
