BRAN MUFFINS (DIET) | |
1 c. oat bran cereal 1 c. instant nonfat dry milk 1 tsp. cinnamon 1 tsp. baking powder 2 tbsp. brown sugar (optional) 1/2 c. Second Nature egg substitute or 2 eggs 1/2 c. applesauce or crushed pineapple 2 tbsp. water Preheat oven to 400 degrees. Mix together dry ingredients. Add egg, fruit and water. Mix well. Add additional water, if too dry. Spoon into muffin pans sprayed with Pam. Bake 15 or more minutes or until muffins spring back. Do not over bake! |
