BLUEBERRY PIE DESSERT | |
Preparation: Fairly easy. Cost: Fairly inexpensive. Preparation time: 50 minutes total; 30 minutes baking time. Oven temperature: 375 degrees, middle rack. 1 1/4 c. all-purpose flour 1/4 c. granulated sugar 1/2 tsp. baking powder 3/4 c. butter 2 tbsp. water or 1 egg yolk FILLING: 1 c. blueberries 1/4 c. granulated sugar Combine flour, sugar and baking powder. Cut in butter until mixture resembles coarse crumbs. Add water or egg yolk. Mix quickly. Form into a dough. Chill for 15 minutes. Roll out dough to form 2 circles, about 8 inches wide. If you roll the dough between 2 pieces of waxed paper, it goes quicker and easier. Fit one circle into a lightly greased pie plate. Trim edges. Prebake at 375 degrees for about 8 minutes. Fill pie shell with blueberries. Sprinkle with sugar. Cover with other dough. Cut some holes in top for steam to escape. Bake pie at 375 degrees for about 20 minutes or until golden brown.
