GREEN CHILE 
3 tbsp. oil
1 yellow onion, diced
5 sm. cans green chili
3 lbs. lean diced pork
2 cloves mixed garlic
1 (16 oz.) can tomatoes
1/2 c. flour
1 1/2 tsp. salt
1 tsp. pepper
5 c. chicken broth
Jalapenos (optional to taste)

In large pot, heat oil and braise pork until lightly browned. Add seasonings, garlic and onion, cover and simmer 5 minutes. Sprinkle in flour and mix. Heat chicken broth (water with bouillon cubes is fine). Add slowly to pot and stir to smooth thickness. Simmer 10 minutes, then add green chilies and broken tomatoes and Jalapenos. Stir and simmer an additional 5 minutes. Can be frozen. Heat and stir to serve.
