COTTAGE CHEESE PANCAKES 
PANCAKES:

6 eggs, beaten
1 1/2 c. flour
2 c. milk
1/3 c. melted butter
Dash of salt

FILLING:

1 lg. carton cottage cheese
1/2 c. sugar
2 eggs

Blend together first 5 ingredients. In lightly oiled fry pan put 2/3 cup of batter and roll around to make thin like crepe. Turn over. Mix filling ingredients with spoon. Put 2 tablespoons of filling on corner of pancake and fold into a fourth. Put on a jelly roll pan. Sprinkle with sugar. Bake at 350 degrees for 30 minutes. Makes about 30 pancakes and is very good served with meat for a meal.
