GRANNY'S SWEDISH RICE PUDDING 
2/3 c. uncooked rice
1/2 tsp. salt
2/3 c. sugar
3 tbsp. cornstarch
3 c. milk
3 egg yolks, beaten slightly
1 tsp. vanilla
3 egg whites
2 tbsp. sugar

Boil rice until tender. In a large pan, add sugar, salt, cornstarch, milk, egg, and vanilla. Add boiled rice to milk mixture and boil until thick, stirring well. Put in casserole, put on meringue and bake 15 minutes in a 350 degree oven.

For meringue, beat egg whites until stiff with sugar.
