OVEN OMELET 
8 slices bacon, coarsely chopped
4 green onions
8 eggs
1 c. milk
1/2 tsp. seasoned salt
2 1/2 c. shredded Jack cheese

Fry bacon until browned. Drain reserving 1 tablespoon drippings. Saute onions in drippings, until limp. Beat eggs with milk and salt. Stir in bacon, onions and 2 cups cheese.

Pour into greased, shallow 2 quart baking dish. Bake uncovered in 350 degree oven for 35-40 minutes until mixture is set and top is lightly browned. When almost done sprinkle remaining 1/2 cup cheese, return to oven until cheese melts. Serves 5.
