JEFFREY'S FAVORITE CHICKEN POT
PIE
 
1/3 c. butter
1/3 c. flour
1/3 c. onion
1 3/4 c. chicken broth
2/3 c. milk
2 c. cut-up, cooked chicken breast
1 (10 oz.) pkg. frozen mixed vegetables
Pie crust
Salt & pepper to taste

Heat butter. Add flour, onion, salt and pepper. Cook until smooth and bubbly. Stir in broth and milk, heat to boiling. Stir 1 minute. Remove from heat. Stir in chicken and vegetables. Pour in prepared crust. Cover with top crust. Slit top to vent. Cook 30 to 35 minutes at 425 degrees.
