APPLE CAKE 
1 1/2 c. cooking oil
2 c. sugar
3 well beaten eggs
3 c. raw, peeled, and diced apples
1 c. chopped pecans
3 c. flour
1 tsp. baking soda
2 tsp. vanilla

Combine the oil, sugar, eggs, apples and pecans in a large bowl. In a separate bowl sift the flour and soda. Add this to the apple mixture. Stir well with two teaspoons vanilla. Bake cake in 3 large layer pans at 325 degrees about 35 minutes.

FROSTING/FILLING:

1 1/2 sticks butter
1 box light brown sugar
2/3 c. canned condensed milk
2 tsp. vanilla
Grated coconut

Cook butter, brown sugar and condensed milk altogether over low heat. Let it come to full boil. Beat until cool, not cold, adding vanilla. Spread and sprinkle coconut between layers and on top.
