BEET RELISH 
4 c. chopped cooked beets
4 c. chopped cabbage
2 c. chopped peppers
1/4 c. salt
4 c. diced celery
2 c. chopped onion
1 c. brown sugar
2 tsp. celery seed

Cook and seal, or can be kept without cooking if kept in a cool place.
