BANANA BREAD 
1 3/4 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
1/3 c. shortening
2 eggs
1 c. mashed bananas (2-3)
2/3 c. sugar

Sift flour, measure and resift 3 times with baking powder, baking soda and salt. Cream shortening and sugar until light and fluffy. Add eggs one at a time and beat well after each addition. Add bananas and mix. Add flour in 4 portions and beat until smooth after each addition.

Put into a well greased pan (4 x 8 x 2 1/2 inch) and bake in moderate oven (350 degrees) for approximately 50 minutes or until bread tests done. Cool on rack before slicing. Makes 1 loaf. (Chopped walnuts and/or chocolate chips can be added, if desired.)
