STUFFED ZUCCHINI 
1 large Alaskan grown zucchini or 2 medium Alaska grown zucchini
1/2 lb. hamburger
3 tbsp. butter
3/4 c. finely chopped onion
3 small cloves crushed garlic
3 beaten eggs
1/2 c. Feta cheese
3/4 c. grated Swiss cheese
2 tbsp. chopped parsley
1 1/2 tbsp. flour
salt
pepper

Scoop out the insides of the zucchini to leave a 1/4 to 1/2-inch of rim. Chop innards into small bits and cook in butter with onions, garlic, salt and pepper until onions are soft. Drain excess liquid. Combine with flour, cheeses, parsley and beaten eggs. Fry hamburger; drain and add to the vegetable and cheese filling. Fill zucchini and dust top with paprika. Place in a 9 x 13 pan.

Bake at 375°F for 30 minutes.
