ALMOND TORTONI 
1 egg white
1/8 tsp. salt
1 tbsp. instant coffee
2 tbsp. (or more) granulated sugar
1/8 tsp. almond flavoring
1 c. whipping or heavy cream
1/4 c. chopped blanched almonds, lightly toasted
1/4 c. granulated sugar

Combine egg white with salt and coffee. Beat until foamy, gradually add 2 tablespoons sugar and beat until stiff. Set aside.

Whip the cream. Add flavoring, 1/4 cup sugar and toasted almonds. Fold whipped cream mixture into egg whites. Pour into parfait glasses and freeze. Top with maraschino cherries.
