MICROWAVE PEANUT BRITTLE 
#1:

1 c. sugar
1/2 c. white corn syrup

In 1-1/2 quart casserole stir together syrup and sugar. Microwave on high for 4 minutes. Stir in 1 cup roasted peanuts. Microwave on high 3 to 5 minutes (until light brown).

#2:

1 tsp. butter
1 tsp. vanilla

Add butter and vanilla to syrup, blend well. Microwave at high 1 to 2 minutes. Peanuts will be lightly browned and syrup very hot.

#3:

1 tsp. baking soda

Gently stir until light and foamy. Pour mixture in lightly buttered cookie sheet. Let cool 1/2 hour to 1 hour. When cool, break into small pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
