CURRIED VEGETABLES 
4 c. cut up vegetables, fresh or frozen
1 tsp. curry powder
1 tsp. cumin powder
2 onions, chopped
1/2 c. fresh chopped cilantro (coriander) leaves
2 tomatoes, chopped
1 tsp. salt
3 tbsp. oil

In a wok or skillet, heat the oil. Brown onions in low - medium heat until transparent. Add the curry powder and cumin powder and salt. Fry on low heat for a few minutes. Add the vegetables. Cook covered on low - medium heat until vegetables are tender. Add tomatoes and cilantro. Simmer 5 minutes ore. Serve on hot rice.
