RICE PUDDING 
4 eggs
1-1/3 c. milk
1/8 tsp. salt
1/2 c. brown sugar
1 tbsp. soft butter
1 tsp. vanilla
1 tbsp. dark rum
3/4 c. raisins
2-1/2 c. cooked rice

All ingredients to be at room temperature. Preheat oven to 325 degrees.

Beat eggs well, add milk, salt, brown sugar, butter, vanilla, rum, raisins and mix well. Add rice and stir entire mixture together thoroughly. Butter a casserole dish well and add mixture.

Bake at 325 degrees for 50 minutes or until toothpick comes out clean. Serve hot or cold with whipped cream.
