GUNNISON COOKIES 
1 c. shortening
1 c. sugar
3 tsp. vanilla
3-4 eggs, beaten
1 1/2 c. shredded carrots
1 c. chopped walnuts
3/4 tsp. salt

FROSTING:

1 c. powdered sugar
1 tbsp. butter
1/2 tbsp. grated orange rind
O.J. for liquid

Cream first 4 ingredients, cook carrots in small amount of water (cooks fast, will burn, watch). Add to above ingredients. Add nuts, flour, baking powder, salt; mix well. Drop by teaspoon on greased cookie sheet. Bake at 350 degrees for 5 to 7 minutes until golden brown. Frost while warm.
