JALAPENO CORNBREAD 
3 c. cornbread mix
2 tbsp. sugar
3 eggs, beaten
2 c. milk
1/2 c. vegetable oil
6 slices bacon, cooked & crumbled
1 lg. onion, diced
1 1/2 c. sharp cheddar cheese, shredded
1 (8 3/4 oz.) can cream style corn
1 (4 oz.) jar diced pimentos, drained
2 tsp. minced Jalapeno peppers or substitute bell pepper

Combine cornbread mix and sugar in a large bowl. Add eggs, milk and oil, mixing well. Stir in remaining ingredients. Pour batter into a greased 9 x 13 x 2 inch baking pan. Bake at 400 degrees for 40 to 45 minutes or until done. Yield: 12 servings.
