JALAPENO CORNBREAD 
1 box Cinch cornbread mix
3 slightly beaten eggs
1/2 c. oil
2 1/2 c. milk
2 c. grated cheddar cheese
1 lg. onion, grated (I use blender)
1 (#303) can whole kernel corn, drained
1/2 can jalapeno peppers, seeded & chopped
1 tbsp. sugar

Mix all ingredients. Pour into 9"x13" greased and floured baking dish plus 6 muffins. Bake at 400 degrees for 40 minutes.
