CONFETTI SALAD WITH MELON 
1/4 lb. spinach leaves
1/2 head Boston lettuce
1 cantaloupe
2 oz. sliced ham
1 lemon
6 tbsp. olive oil
Salt and pepper

Wash spinach and lettuce, drain. Shred with knife. Toss the greens together and put in bowl. Scoop out the melon with a melon baller and add to greens. Cut the ham into 1/2 inch strips and add to the bowl.

Squeeze 2 tablespoons juice from lemon. Shake lemon juice, 3/4 teaspoon salt and 1/4 teaspoon pepper together in a jar until salt dissolves. Add oil and shake again. Pour dressing over salad. Toss and taste for seasoning. Add salt and pepper if needed. 4 servings.
