QUICK RICOTTA CAKE 
1 pkg. yellow cake mix
2 lbs. ricotta cheese
4 eggs
1 tsp. vanilla extract
3/4 c. sugar
1 can crushed pineapple, drained

Preheat oven to 350 degrees. Grease a 13 x 9 inch pan. Prepare cake mix according to directions on box. Pour into prepared pan. Beat ricotta with eggs, vanilla and sugar. Add pineapple. Pour this mixture over cake batter in pan. If desired, add some cherries. Bake for 45 minutes to 1 hour or until done. When cooled, sprinkle with powdered sugar.
