POTATO PANCAKES 
2 lg. raw potatoes
1 tbsp. grated onion
2 eggs, beaten
1 tsp. salt or to taste
2 tbsp. flour
Pinch of pepper
Melted fat or salad oil
Bacon, cooked and crumbled; optional

Wash and pare potatoes then grate on fine grater. Quickly stir in onions, eggs, flour, and seasonings. Drop by spoonfuls into hot grease. Cook until brown and turn.
