FABULOUS FISH 
1 lb. flounder or orange roughy fillets
Salt and pepper
1 tsp. lemon juice
1/2 c. chopped mushrooms
1 tbsp. butter
1/4 c. slivered green pepper
1/2 c. diced tomato
3 tbsp. chopped green onions
6 orange sections
6 grapefruit sections
3 tbsp. orange juice
3 tbsp. white cooking wine
Pam cooking spray

Preheat oven to 400 degrees. Sprinkle fish with salt and pepper and lemon juice. Lay in a baking dish sprayed with Pam.

In a skillet, saute mushrooms in butter until lightly browned (4-6 minutes). Stir in green pepper, tomato and onion; cook for 2 minutes. Then spoon the mixture over the fish. Lay the fruit sections on top; drizzle with the orange juice and wine.

Cover tightly with foil and bake 12-15 minutes or until fish flakes easily when pierced with a fork. Garnish with parsley.
