SPINACH CASSEROLE 
2 pkgs. chopped spinach, cooked (microwave) and well drained
2 eggs, beaten
15 oz. Ricotta
3 tbsp. Parmesan cheese (grated)

Mix ingredients thoroughly.

CASSEROLE TOPPER:

In small frying pan, melt:

2 tsp. butter

Add:

3 tbsp. bread crumbs
2 tbsp. Parmesan cheese

Blend, do not let cheese melt. Sprinkle over casserole. Bake 350 degrees 45 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
