CENTRAL ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
3 c. flour
2 tsp. baking soda
1/4 tsp. baking powder
1 1/2 tsp. cinnamon
1 tsp. salt
3/4 tsp. nutmeg
2 c. zucchini, shredded
1 can crushed pineapple
1 c. chopped nuts
1 c. raisins
1 c. coconut

In a large bowl, beat eggs, oil, sugar and vanilla. Stir in zucchini. Drain pineapple and add. Sift dry ingredients. Add and mix well. Add raisins, coconut and nuts; mix. Divide and pour into 2 floured and greased loaf pans. Bake at 350 degrees for 1 hour. Check with a toothpick. Cool for 10 minutes. Then turn onto racks.
