KENTUCKY - BOURBON BALLS 
1/2 c. butter, softened
1 lb. powdered sugar, sifted
1/4 c. bourbon
1 c. chopped pecans
4 (1 oz.) sq. semi-sweet chocolate
4 (1 oz.) bites sweet chocolate

Cream butter; gradually add sugar. Beat well with electric mixer. Stir in bourbon. Knead until mixture is blended. Knead in pans. Refrigerate 1-2 hours. Shape into 1 inch balls. Chill at least 8 hours.

Place all chocolate in top of a double boiler, bring water to boil. Reduce heat to low; cook until chocolate melts. Dip each ball. Cool. Refrigerate. 4 dozen.

THIS is the official KY bourbon ball recipe... No vanilla wafers for us. Follow directions exactly for the best bourbon ball you'll ever have! Stick a toothpick into each ball for easy dipping then place on wax paper to dry. Keep refrigerated in an air tight container -- either tin box or Tupperware.

I like this recipe, but I need to omit the nuts. I have friends that can't eat nuts but want the Bourbon balls. I am going to try this recipe without the nuts this year for some of my friends.. I made them last year for my drinking friends and they loved them...
