AUNT NORA'S IRISH BREAD 
1/4 lb. butter
2 1/4 c. sugar
2 1/4 c. fresh milk
2 tsp. lemon extract
4 eggs
8 1/2 to 9 c. flour
4 tbsp. baking powder
3 tsp. caraway seeds
15 oz. pkg. raisins

The mixture should be stiff enough to handle. Preheat oven to 400 degrees and have it hot for at least 10 minutes. Turn oven down to 300 degrees when you are ready to place the pans in the oven. Melt butter over a low flame or in the microwave. Add sugar to melted butter. Beat eggs until stiff and lemon colored. Add this to butter and sugar mixture. Then add milk and lemon extract. Mix well. Set aside. In a large bowl, mix together all dry ingredients. Add first mixture to this all at once and mix. Spoon in regular bread pans 9 x 5 x 3 inch, lightly greased. (This recipe makes 3 loafs). Turn oven down as noted above and bake for 1 hour or until done. Use large roaster fork to test.

Since microwave ovens vary in power, you may need to adjust your cooking time.
