EASY MAN'S MEAL | |
1 lb. lean hamburger 1 lg. onion, chopped 2 stalks celery, chopped 1 (17 oz.) can peas, drained 1 (16 oz.) can tomatoes, chopped 1 (8 oz.) can carrots, drained 1 c. tomato juice Salt and pepper to taste 4 servings mashed potatoes In a large frying pan, cook hamburger, onion and celery until meat is done and vegetables are soft. Drain off any fat. Add the peas, chopped tomatoes and juice, carrots, and 1 cup tomato juice. Add salt and pepper to taste. Simmer over low heat 20 minutes, stirring mixture after 10 minutes. To serve, make a mound of mashed potatoes and make a big hole in middle. Spoon mixture into middle of potatoes. |
