EGG CASSEROLE 
4 oz. Canadian bacon
1/4 c. diced onion
12 eggs, beaten
1 sm. can mushrooms, drained
2 c. milk
4 tbsp. butter
2 tbsp. flour
4 oz. American cheese, cubed
3 slices diced bread
4 tbsp. melted butter
Paprika

Saute bacon and onion in butter. Scramble beaten eggs until set, adding to bacon and onion. Add mushrooms.

Make white sauce by combining butter and flour, then milk and cheese. Cook until thickened. Put egg mixture in an 8x11 inch baking pan. Cover with sauce. Crisp diced bread in butter and sprinkle on top of casserole. Sprinkle on paprika. Bake at 350 degrees for 35-40 minutes.
