SEAFOOD THERMIDOR 
3 tbsp. butter
3 tbsp. all-purpose flour
1 1/2 c. half and half or cream (or use 1/2 milk)
1/2 c. shredded processed cheese (Velveeta)
1/4 c. shredded Cheddar cheese
3 tbsp. dry sherry (or 1 tbsp. lemon juice)
1/8 tsp. ground nutmeg
1/8 tsp. paprika
1 lb. imitation crab meat (thawed and torn)

Melt butter in deep 2 quart microwave safe casserole. Stir in flour then half and half until smooth.

Add cheeses, sherry, nutmeg and paprika.

Cover with wax paper and microwave on high 3-4 minutes STIRRING EVERY MINUTE until thickened.

Stir in crab meat and microwave on high another 1-2 minutes until hot.

Serve over rice. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
