ZESTY SALSA SUPREME 
1/2 c. chopped, seeded cucumber
1/2 c. chopped red or green pepper
1/3 c. finely grated carrot
1/4 c. salsa, chunky (either mild, medium, or hot)
1 (4 oz.) can green chilies
2 tbsp. chopped parsley
Triscuits or other sm. crackers
1 c. prepared guacamole

Combine cucumber, pepper, carrot, salsa, chilies, and parsley until blended. Spoon a rounded teaspoonful onto cracker and top with a dollop of guacamole and garnish with carrot if desired.
