AMARETTO CREAM 
1 env. unflavored gelatin
1/4 c. cold water
3 eggs
1/3 c. sugar
1/4 c. Amaretto liqueur
1 c. whipping cream
1/4 c. sliced almonds
Sliced strawberries and mint leaves for garnish

In a 1-2 quart pan, sprinkle gelatin over water; let stand 5 minutes to soften. Heat over medium heat for 30 seconds until mixture begins to simmer. Remove from heat.

In small mixer bowl, beat eggs on high for 2 minutes or slightly thick. Slowly beat in sugar, liqueur and gelatin.

In large mixer bowl, beat cream to soft mounds. Add egg mixture and fold in to blend. Pour into 1 quart mold or individual dishes. Refrigerate for 3 hours until set. Garnish with strawberries and mint and toasted almonds.
