BEEF AND BARLEY HOT DISH 
3/4 c. barley
2 c. boiling water
1 tsp. salt
1 lb. ground beef
1 med. onion
1 green pepper, chopped
1 c. sliced fresh mushrooms
1 c. diced tomatoes
1 c. diced celery
1 tsp. each salt, dried oregano & basil
1/2 c. grated Romano cheese
1 (11 oz.) can mandarin oranges, drained (opt.)

Put barley, water and salt into pan. Simmer 30 minutes; drain. Meanwhile, brown beef with onion in heavy skillet over medium heat. Add green pepper, mushrooms, tomato, celery, salt, oregano and basil. Stir. Hold on low heat until barley is ready. Blend barley into beef mixture. Turn into a 2 quart lightly oiled casserole dish. Cover and bake at 375 degrees for 30 minutes. During last 5 minutes, remove cover and sprinkle with cheese. Before serving garnish edges of casserole with oranges.
